  • 2 cups (one pint) sour cream, room temperature

  1. Prepare Your Pan:
    Begin by generously buttering the inside of a 10-inch springform pan. Then, wrap a double layer of heavy-duty aluminum foil tightly around the outside bottom and sides of the pan. This crucial step prevents water from seeping into the pan during the bain-marie (water bath). Ensure the foil conforms well to the pan by crimping and pleating it.
  2. Preheat the Oven:
    Position your baking rack in the center of the oven and preheat to 300°F (150°C). This low, slow bake is key to achieving a smooth, crack-free cheesecake.
  3. Mix the Ingredients:
  • In a large mixing bowl, use an electric mixer to beat the eggs with the sour cream until well blended.
  • In a separate medium-sized bowl, beat the cream cheese with the butter until the mixture is smooth and creamy.
  • Combine the cream cheese-butter mixture with the egg-sour cream mixture and beat until smooth.
  • Add the sugar, cornstarch, vanilla extract, lemon juice, and lemon zest. Beat thoroughly for about 2 minutes until all ingredients are well incorporated.
