This Sticky Crispy Chicken Burger combines juicy, tender chicken with a perfectly crispy coating, coated in a sweet, spicy, and sticky sauce. The chicken is marinated in a spiced buttermilk mixture for extra flavor and tenderness, then double-dredged in a seasoned flour blend to create an ultra-crispy crust. After frying to golden perfection, each piece is tossed in a rich, buttery honey-chili sauce that’s both sweet and fiery. Served on a toasted bun with fresh lettuce and a creamy chili-mayo spread, this burger is an irresistible, flavor-packed treat that’s both crunchy and saucy with every bite!

Ingredients

Chicken Mixture:

  • 400 g chicken breast
  • 200 ml buttermilk
  • 6 g salt
  • 5 g garlic powder
  • 4 g paprika powder
  • 5 g onion powder
  • 1 g dried parsley
  • 2 g cayenne pepper
  • 2 g black pepper
  • 1 egg
  • 15 g honey

Flour Mixture:

  • 150 g all-purpose flour
  • 50 g cornstarch
  • 3 g garlic powder
  • 3 g onion powder
  • 4 g paprika powder
  • 2 g cayenne pepper
  • 3 g salt
  • 3 g powdered sugar

Sauce:

  • 75 g butter
  • 60 g honey
  • 75 g chili sauce (such as Go-Tan)
  • 15 g sambal

Extras:

  • 150 g mayonnaise
  • 75 g chili sauce (Go-Tan)
  • Lettuce
  • Burger buns

Instructions

  1. Prepare the Buttermilk Marinade:
    In a large bowl, mix the buttermilk, salt, garlic powder, onion powder, paprika powder, dried parsley, cayenne pepper, black pepper, egg, and honey until well combined.
  2. Marinate the Chicken:
    Wash and cut the chicken breast into pieces. Add the chicken pieces to the buttermilk mixture, cover, and refrigerate for 30 minutes.
  3. Prepare the Flour Coating:
    In a separate bowl, combine the flour, cornstarch, garlic powder, onion powder, paprika powder, cayenne pepper, salt, and powdered sugar. Mix well.
  4. Coat the Chicken:
    Remove the chicken pieces from the marinade and thoroughly coat each piece in the flour mixture. Repeat this step to double-coat the chicken for extra crispiness.
  5. Make the Sauce:
    In a skillet, heat the butter, honey, chili sauce, and sambal over low heat. Stir well until everything is melted and combined.
  6. Fry the Chicken:
    Heat a layer of vegetable oil in a frying pan to about 175°C (350°F). Fry the chicken pieces for about 3 minutes on each side, or 3-4 minutes in a deep fryer, until golden and crispy. Place the fried chicken on paper towels to drain any excess oil.
  7. Toss in Sauce:
    Place the fried chicken in a bowl, pour the sauce over, and toss to coat evenly.
  8. Prepare the Burger Buns:
    Toast homemade or store-bought burger buns in a bit of butter until golden.
  9. Assemble the Burgers:
    Spread mayonnaise and chili sauce on the buns, add lettuce, then place the sticky, crispy chicken on top. Serve warm and enjoy!
