Ingredients:

  • 1 large onion, thinly sliced
  • Salt and pepper
  • 1 lb ground beef
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 4-8 slices American cheese
  • Mayo, mustard, and pickles, for serving
  • 4 hamburger buns, toasted

How to Make Smothered Cube Steak:

  1. Prep the Onions:
    Combine the thinly sliced onions with salt in a bowl and let sit for 30 minutes. Squeeze out excess liquid from the onions using a clean dish towel.
  2. Form the Patties:
    Divide the onions into 4 mounds on a baking sheet. Form the ground beef into 4 balls and place them on top of the onion mounds. Flatten the beef firmly to adhere the onions, forming 4-inch diameter patties. Season generously with salt and pepper.
  3. Cook the Patties:
    Heat butter and oil in a skillet over medium heat. Transfer the patties to the skillet, onion side down, and cook for 6-8 minutes until onions are golden brown and crisp. Flip the burgers, increase heat to high, and cook for an additional 2 minutes. Add cheese slices on top of each patty and allow to melt.
  4. Assemble the Burgers:
    Spread mayo and mustard on the top buns, then add pickles. Place each patty on a bottom bun and assemble the burgers.
