    • Ingredients
    • Directions

Ingredients

  • 1½ lbs sausage (kielbasa or smoked sausage, sliced into ¼-inch rounds)
  • 2 lbs creamer potatoes (or small red potatoes, washed and halved)
  • 1 lb green beans (trimmed, fresh or frozen)
  • ⅛ cup vegetable oil
  • ¼ cup butter
  • 1 cup onions (chopped)
  • 3 garlic cloves (minced)
  • 1 tsp Slap Ya Mama seasoning
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • ½ tsp red pepper flakes
  • ¼ cup water

Instructions

  1. Preheat Your Oven: Preheat the oven to 400°F (200°C).
  2. Season the Potatoes: Add the potatoes to a large sealable bag. Pour in the vegetable oil, Slap Ya Mama seasoning, garlic powder, black pepper, and red pepper flakes. Shake well to evenly coat the potatoes.
  3. Cook the Sausage: In a large skillet over medium heat, cook the sausage slices with ¼ cup water. Let most of the water evaporate, then lightly brown the sausage. Remove from heat and allow to cool slightly before adding to the bag with the potatoes.
  4. Prepare the Onion Mixture: In the same skillet, melt the butter and sauté the onions and garlic until fragrant and translucent. Let cool briefly, then add to the bag with the potatoes and sausage.
  5. Combine the Ingredients: Add the green beans to the bag and shake to mix all ingredients thoroughly.
  6. Assemble the Casserole: Pour the contents of the bag into a 9×13-inch baking dish. Spread everything out evenly. Cover the dish tightly with aluminum foil.
  7. Bake: Bake in the preheated oven for 40 minutes, or until the potatoes are fork-tender.
  8. Serve and Enjoy: Remove from the oven, uncover, and serve warm.

Tips

  • Use fresh green beans for the best texture, but frozen works just as well if thawed beforehand.
  • For a crispier finish, broil the casserole uncovered for the last 5 minutes.
  • Adjust the spice level by adding more or less red pepper flakes.

Variations and Substitutions

  • Swap kielbasa for Italian sausage, chicken sausage, or turkey sausage.
  • Substitute sweet potatoes for a slightly sweeter twist.
  • Add bell peppers or mushrooms for extra veggies.
  • Replace Slap Ya Mama seasoning with Cajun seasoning or your favorite spice blend.

FAQs

Can I use canned green beans?
Yes, but drain and rinse them well. Add them in the last 10 minutes of cooking to prevent overcooking.

Do I need to parboil the potatoes?
No, halving small potatoes ensures they cook evenly in the oven.

Can I make this dish ahead?
Absolutely! Assemble the casserole up to a day in advance, cover, and refrigerate. Add 5-10 minutes to the baking time if starting from cold.

Serving Suggestions

  • Pair this casserole with warm crusty bread or a fresh garden salad for a complete meal.
  • Add a dollop of sour cream or sprinkle with shredded cheese for extra indulgence.
