Ingredients

For the Donuts:

  • 1 ¼ cups whole milk (300 ml)
  • 2 ¼ tsp instant (quick-rise) yeast (7 g, 1 packet)
  • 2 large eggs
  • 8 tbsp unsalted butter (113 g), melted and cooled
  • ¼ cup granulated sugar (50 g)
  • 1 tsp salt
  • 4 ¼ cups bread flour (535 g), plus more for rolling out the dough
  • Oil for frying

For the Glaze:

  • 4 cups powdered sugar (500 g)
  • ½ cup milk (120 ml)
  • Pinch of salt

Instructions

  1. Make the Donut Dough:
  • Warm the milk in the microwave for about 45 seconds until it’s lukewarm. Add the yeast to the milk and stir gently. Let the mixture sit for about 5 minutes, or until it becomes foamy.
  • In the bowl of a stand mixer fitted with a dough hook, combine the yeast mixture, eggs, melted butter, sugar, and salt. Beat until combined.
  • Gradually add half of the flour and mix until incorporated. Add the remaining flour and mix again until well combined. If the dough is too sticky, add flour one tablespoon at a time until the dough is manageable.
  • Cover the bowl with a kitchen towel and place it in a warm area to rise until the dough doubles in size, about 1 hour.
  1. Shape the Donuts:
  • Once the dough has risen, turn it out onto a floured surface. Roll it out to about ½-inch thickness.
  • Use a donut cutter or two round cookie cutters (about 3 inches for the outer circle and 1 inch for the hole) to cut out the donuts. Save the donut holes.
  • Gently knead the dough scraps together and repeat the rolling and cutting process.
  • Place the cut donuts on parchment paper, leaving space between them. (TIP: Placing each donut on an individual piece of parchment paper makes it easier to transfer them into the hot oil.) Cover the donuts with a kitchen towel and let them rise for about 45 minutes, until puffed up.
  1. Fry the Donuts:
  • Heat oil in a deep-fryer or large pot to 375°F (190°C), about 15 minutes before the donuts finish rising.
  • Place cooling racks over paper towels or parchment paper for draining the fried donuts.
  • Carefully add the donuts to the hot oil, a few at a time, making sure not to overcrowd. (TIP: It’s easier to place the donut and parchment paper into the oil together and remove the paper with tongs.)
  • Fry the donuts for about 45 seconds on one side, or until golden, then flip them using a spatula and cook the other side until golden. Donut holes will cook faster. Remove the donuts using tongs or a slotted spatula and transfer to the cooling racks. Keep the oil at the right temperature throughout the process.
  1. Make the Glaze:
  • In a large bowl, whisk together the powdered sugar, milk, and a pinch of salt until smooth. If you prefer a thinner glaze, add more milk a teaspoon at a time.
  1. Glaze the Donuts:
  • Once the donuts are slightly cooled but still warm, dip the tops into the glaze. Flip the donut over using a fork, allowing the glaze to drip off. Transfer the glazed donuts to the cooling rack to set. Repeat with the remaining donuts.

Enjoy your homemade, warm and sweet glazed donuts! These melt-in-your-mouth donuts are perfect for breakfast or as a sweet treat any time of the day.
