  3. Toast the rice: In the same skillet, add the remaining 1 tbsp of olive oil. Stir in the rice and toast it for 2-3 minutes, making sure it’s well-coated with the oil.
  4. Cook the rice and broccoli: Pour in the chicken broth and stir gently to combine. Bring the mixture to a boil. Once boiling, reduce the heat to a simmer, cover, and cook for 10-12 minutes until the rice is almost fully cooked (about 80-90% done).
  5. Add the broccoli: Stir in the broccoli florets and cook for an additional 5-7 minutes, until the broccoli is tender and the rice has absorbed most of the chicken broth.
  6. Combine the chicken and cheese: While the rice and broccoli are finishing, cut the chicken into bite-sized pieces. Stir in 1/2 cup of shredded cheddar cheese into the rice mixture. Top with the remaining 1 cup of shredded cheese and let it melt before serving.
