Ingredients:
- 1.5 cups peanut butter
- 1.5 cups oat flour (rolled oats processed finely in a food processor)
- 1/4 cup maple syrup
- 1 cup chocolate chips
- 1 tsp coconut oil (optional)
Instructions:
- Melt the Peanut Butter Mixture:
In a microwave-safe bowl, combine the peanut butter and maple syrup. Microwave for 40-60 seconds, then stir well until the mixture is fully combined and smooth. - Mix in Oat Flour:
Gradually add the oat flour to the bowl, mixing thoroughly (the mixture will be thick, so it may take some effort to stir). If the mixture feels too dry or crumbly, add a little extra peanut butter or maple syrup, one teaspoon at a time, until it’s moldable but not too sticky. - Prepare the Muffin Pan:
Line a muffin tin with cupcake liners or use a silicone muffin pan for easy removal. (Note: The mixture can be hard to remove from a regular muffin pan without liners.) You can also use a mini muffin tin or mini silicone pan. - Fill the Muffin Pan:
Scoop the peanut butter oat mixture evenly into the muffin cups, pressing down gently with your fingers to compact the mixture. - Melt the Chocolate:
In a small microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Heat in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth. - Add the Chocolate Layer:
Pour the melted chocolate over the peanut butter oat mixture in each muffin cup. Use the back of a spoon to smooth the chocolate layer. If desired, top with flaky salt, sprinkles, or mini chocolate chips for extra flair. - Chill and Set:
Refrigerate the cups for 2-3 hours, or until the chocolate layer is set and the cups are firm. - Serve and Store:
Once set, carefully remove the cups from the muffin tin or silicone pan. Store in an airtight container in the refrigerator for up to 5 days for optimal freshness.
Enjoy these easy, no-bake peanut butter oat cups as a delicious snack or treat!
