Ingredients
- 1 lb. cooked, shredded, seasoned chicken breast (about 3-4 cups; see notes for cooking options)
- 8 oz. shredded Colby Jack cheese
- 20–24 street taco-sized corn tortillas
- Olive oil or cooking spray
To Serve:
- Sour cream
- Salsa
- Fresh chopped cilantro
Instructions
- Preheat Oven
Set your oven to 425°F (220°C). - Prepare Tortillas
Arrange the tortillas on a baking sheet, then brush or spray both sides lightly with olive oil. - Assemble Tacos
Add a heaping tablespoon of shredded chicken onto each tortilla, then top with a generous tablespoon of shredded cheese. Depending on the size of your baking sheet, you may need a second one to fit all the tortillas. - Bake to Melt Cheese
