Mini Chicken Tacos

These Mini Chicken Tacos are the ultimate bite-sized snack or appetizer! Each taco is filled with tender, seasoned shredded chicken and gooey melted Colby Jack cheese, all wrapped in a crispy, golden corn tortilla. Perfectly handheld and bursting with flavor, they make a fantastic addition to any meal or gathering. Serve them with tangy sour cream, zesty salsa, and fresh cilantro for a refreshing finish. Whether for game day, parties, or a fun dinner, these mini tacos are sure to be a crowd-pleaser!

Ingredients

  • 1 lb. cooked, shredded, seasoned chicken breast (about 3-4 cups; see notes for cooking options)
  • 8 oz. shredded Colby Jack cheese
  • 20–24 street taco-sized corn tortillas
  • Olive oil or cooking spray

To Serve:

  • Sour cream
  • Salsa
  • Fresh chopped cilantro

Instructions

  1. Preheat Oven
    Set your oven to 425°F (220°C).
  2. Prepare Tortillas
    Arrange the tortillas on a baking sheet, then brush or spray both sides lightly with olive oil.
  3. Assemble Tacos
    Add a heaping tablespoon of shredded chicken onto each tortilla, then top with a generous tablespoon of shredded cheese. Depending on the size of your baking sheet, you may need a second one to fit all the tortillas.
  4. Bake to Melt Cheese
    Bake the tortillas for about 2 minutes, just until the cheese begins to melt. Remove from the oven, then carefully fold each tortilla in half, pressing gently to form the taco shape.
  5. Bake Until Crispy
    Return the tacos to the oven and bake for an additional 12-15 minutes, or until the tortillas are golden and crispy on the outside.
  6. Serve and Enjoy
    Serve these crispy mini tacos with sour cream, salsa, and a sprinkle of fresh cilantro. Enjoy!

Notes

  • Chicken Preparation Options: For easy shredded chicken, try using either a 3-ingredient crockpot shredded chicken or simple Instant Pot shredded chicken. Alternatively, you can use shredded rotisserie chicken—just mix in ½ cup of salsa and 2 tablespoons of chicken taco seasoning to add extra flavor.
  • Tortilla Options: While street taco-sized tortillas make perfect bite-sized tacos, you can also use regular-sized corn tortillas for larger tacos.
  • Crispness Check: You’ll know the tacos are ready when the shells are crispy on the outside, and the cheesy chicken filling is hot and melty inside.
