  3. Pour in the Mexican-style beer to deglaze the pot, scraping up any browned bits from the bottom.
  4. Stir in the chicken or vegetable broth, dried oregano, ground cumin, bay leaves, diced green chiles, diced tomatoes with green chiles, rinsed and drained pinto beans, and minced chipotle pepper. Mix well to combine.
  5. Bring the soup to a simmer and let it cook for 20 minutes, allowing the flavors to meld together.
  6. If desired, use an immersion blender to puree part of the soup for a thicker consistency.
  7. Stir in the cooked bacon and season the soup to taste with kosher salt and freshly ground black pepper.
