Ingredients:
- 1 lb extra lean ground beef
- 1/2 cup onion, chopped
- 1/4 cup canned jalapeno slices, chopped
- 2 cups fresh tomatoes, chopped or 1 (15 ounce) can diced tomatoes
- 1 (15 ounce) can kernel corn, drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (1 1/4 ounce) package taco seasoning mix
- 8 corn tortillas
- 3/4 cup nonfat sour cream
- 1/3 cup reduced-fat Mexican cheese blend, shredded
- 1/3 bunch fresh cilantro, chopped, to taste
Instructions:
- Brown Ground Beef: In a large skillet, brown the extra lean ground beef and chopped onions until thoroughly cooked. Drain well and rinse with warm water to remove excess fat. Return the beef and onions to the skillet.
- Add Ingredients: To the skillet, add the corn, black beans, tomatoes, chopped jalapeno slices, and taco seasoning mix. Mix well and simmer for 5 minutes, allowing the flavors to meld together.
- Prepare Baking Dish: Preheat the oven to 350°F. Spray a 12×8-inch (2-quart) baking dish with nonstick cooking spray. Cut each corn tortilla in half and place 8 halves in the bottom of the baking dish, overlapping slightly.
- Layer Ingredients: Spoon half of the beef mixture evenly over the tortillas in the baking dish. Next, spoon the sour cream over the beef mixture and spread it evenly. Top with the remaining tortilla halves and the remaining beef mixture.
- Add Toppings: Sprinkle the shredded Mexican cheese blend over the top of the casserole. Garnish with chopped fresh cilantro to taste.
- Bake: Cover the baking dish tightly with foil and bake in the preheated oven for 25-30 minutes, or until heated through and the cheese is melted and bubbly.
