Meatloaf Ingredients:

  • 2 lbs ground beef (85% or 90% lean)*
  • 1 medium onion, finely chopped*
  • 2 large eggs
  • 3 garlic cloves, minced
  • 3 Tbsp ketchup
  • 3 Tbsp fresh parsley, finely chopped
  • 3/4 cup Panko breadcrumbs (or gluten-free breadcrumbs)
  • 1/3 cup milk
  • 1 1/2 tsp salt (adjust to taste)
  • 1 1/2 tsp Italian seasoning
  • 1/4 tsp ground black pepper
  • 1/2 tsp ground paprika

Meatloaf Sauce Ingredients:

  • 3/4 cup ketchup
  • 1 1/2 tsp white vinegar
  • 2 1/2 Tbsp brown sugar
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt

Instructions:

  1. Preheat your oven to 375°F and line a 9”x5” loaf pan with parchment paper for easy cleanup.
  2. In a large mixing bowl, combine all the meatloaf ingredients. Mix thoroughly until well combined.
  3. Transfer the meat mixture to the prepared loaf pan. Gently press it down to evenly shape it.
  4. Bake the meatloaf uncovered for 40 minutes.
  5. While the meatloaf is baking, prepare the sauce. In a small bowl, mix together all the sauce ingredients until smooth.
  6. After 40 minutes of baking, spread the sauce evenly over the top of the meatloaf. Return the pan to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 160°F (use an instant-read thermometer for accuracy).
  7. Remove the meatloaf from the oven and let it rest for 10-15 minutes before slicing. Drizzle with the juices collected in the pan for added flavor.

Tips

  • Choose the right beef: Use 85% or 90% lean ground beef for the perfect balance of flavor and juiciness.
  • Don’t overmix: Gently mix the ingredients to prevent a dense meatloaf.
  • Use a thermometer: Ensure the meatloaf reaches an internal temperature of 160°F for safe and delicious results.
  • Parchment paper lining: Makes cleanup easier and helps the meatloaf retain its shape.

Variations and Substitutions

  • Meat options: Swap ground beef for turkey, chicken, or a mix of ground meats for a different flavor.
  • Breadcrumb alternatives: Use crushed crackers, oats, or almond flour for gluten-free options.
  • Flavor boosters: Add Worcestershire sauce, grated Parmesan, or diced bell peppers for an extra kick.
