  • 2 lbs fresh mushrooms (quartered, halved, or left whole if small)
  • 16 cups water
  • 3 Tbsp vinegar

For the Marinade:

  • 1/2 cup white vinegar
  • 2 tsp salt
  • 1 tsp sugar
  • 3 garlic cloves, chopped
  • 2-3 bay leaves
  • 1/2 tsp freshly ground black pepper
  • 1 red pepper, chopped
  • 1 1/2 Tbsp dill weed (fresh, frozen, or dry)
  • 2 cups water
  • 1/2 cup vegetable oil

Instructions

Step 1: Prepare the Marinade

  1. In a medium saucepan, combine vinegar, salt, sugar, garlic, bay leaves, black pepper, red pepper, and dill.
  2. Simmer the mixture for 5 minutes.
  3. Add 2 cups of water and bring to a boil. Simmer for another 5 minutes, then stir in the oil. Turn off the heat and set aside.

Step 2: Prepare the Mushrooms

  1. Boil 16 cups (4 quarts) of water with 3 Tbsp vinegar or lemon juice to prevent the mushrooms from browning.
  2. Rinse the mushrooms thoroughly. Immediately cut them into quarters, halves, or leave them whole if small.
  3. Place the prepared mushrooms into the boiling water, stir, cover, and cook for 3 minutes.
