Ingredients:
- 1 pound Sirloin Steak
- ¼ teaspoon salt
- Pinch of cayenne pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- ¼ teaspoon cumin
- ½ teaspoon paprika
- ¼ teaspoon ground Mexican Oregano
- 1 teaspoon Ancho Chili powder
Quesadillas:
- 4 large 10 to 12-inch tortillas
- 2 cups Mexican Cheese
- ½ cup cherry tomatoes, thinly sliced
- ½ cup canned black beans, drained
- ½ cup roasted corn, drained
- ½ avocado, diced into chunks
- Cilantro and Lime wedges for garnishing
Instructions:
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a small bowl, combine the salt, cayenne pepper, garlic powder, onion powder, cumin, paprika, ground Mexican Oregano, and Ancho Chili powder.
- Rub the spice mixture generously on both sides of the sirloin steak.
- Heat a skillet over medium-high heat and add 2 tablespoons of Olive Oil. Sear the steak on each side for no more than 3 minutes per side.
- Remove the steak from the heat and let it rest for 5 minutes. Thinly slice the steak against the grain.
- Place two tortillas on the parchment-lined baking sheet. Sprinkle ½ cup of Mexican cheese on each tortilla.
- Top the cheese with sliced cherry tomatoes, drained black beans, roasted corn, and diced avocado.
- Layer the sliced steak on each tortilla and sprinkle the remaining cheese on top of the meat. Place another tortilla on each quesadilla.
- Bake in the preheated oven for 6 to 8 minutes, or until the cheese is melted and bubbly.
