Loaded Steak Quesadillas

Prepare yourself for an extraordinary quesadilla recipe that will tantalize your taste buds. This isn’t your average quesadilla; it’s a masterpiece brimming with delectable ingredients. Picture succulent sirloin steak, creamy avocado, hearty beans, sweet corn, juicy tomatoes, and a generous sprinkle of Mexican cheese. And if you feel like there’s something missing, feel free to add your own special touch. Get ready to embark on a culinary adventure with this sensational quesadilla creation!

Ingredients:

  • 1 pound Sirloin Steak
  • ¼ teaspoon salt
  • Pinch of cayenne pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon cumin
  • ½ teaspoon paprika
  • ¼ teaspoon ground Mexican Oregano
  • 1 teaspoon Ancho Chili powder

Quesadillas:

  • 4 large 10 to 12-inch tortillas
  • 2 cups Mexican Cheese
  • ½ cup cherry tomatoes, thinly sliced
  • ½ cup canned black beans, drained
  • ½ cup roasted corn, drained
  • ½ avocado, diced into chunks
  • Cilantro and Lime wedges for garnishing

Instructions:

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine the salt, cayenne pepper, garlic powder, onion powder, cumin, paprika, ground Mexican Oregano, and Ancho Chili powder.
  3. Rub the spice mixture generously on both sides of the sirloin steak.
  4. Heat a skillet over medium-high heat and add 2 tablespoons of Olive Oil. Sear the steak on each side for no more than 3 minutes per side.
  5. Remove the steak from the heat and let it rest for 5 minutes. Thinly slice the steak against the grain.
  6. Place two tortillas on the parchment-lined baking sheet. Sprinkle ½ cup of Mexican cheese on each tortilla.
  7. Top the cheese with sliced cherry tomatoes, drained black beans, roasted corn, and diced avocado.
  8. Layer the sliced steak on each tortilla and sprinkle the remaining cheese on top of the meat. Place another tortilla on each quesadilla.
  9. Bake in the preheated oven for 6 to 8 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and slice the quesadillas into quarters or eighths. Garnish with cilantro and serve with lime wedges.
  11. Enjoy your mouthwatering, loaded quesadillas!
