  • 2 tablespoons lemon pepper seasoning
  • ¼ cup butter, softened
  • ⅛ teaspoon cayenne pepper (optional, adjust to taste)
  • Chopped parsley (optional, for garnish)

Instructions

  1. Prepare for Baking:
    • Preheat the oven to 375°F (190°C).
    • Arrange lemon slices in a single layer at the bottom of a baking dish.
  2. Season the Chicken:
    • Lightly sprinkle salt on one side of the chicken breasts. Place the salted side down on top of the lemon slices in the baking dish.
  3. Make the Butter Mixture:
    • In a small bowl, combine softened butter, lemon pepper seasoning, additional salt (if using), and cayenne pepper. Mix well with a fork until evenly combined.
  4. Coat the Chicken:
    • Rub the butter mixture generously over the chicken breasts. If using chicken thighs, spread some butter mixture underneath the skin for extra flavor.
  5. Bake the Chicken:
    • Bake for 25–28 minutes for boneless chicken breasts or 35–40 minutes for bone-in chicken thighs. Check for an internal temperature of 161°F.
    • Halfway through baking, baste the chicken with the melted butter drippings from the dish.
  6. Rest and Serve:
    • Remove the chicken from the oven and let it rest for 5 minutes. During this time, the internal temperature should rise to 165°F.
    • Portion the chicken onto plates, drizzle with additional melted lemon-pepper butter, and garnish with parsley if desired. Serve immediately.
