HEALTHY TACO STUFFED TOMATOES

Something to try when trying to eat healthy, while craving all those exciting taco flavors. Ground beef, tomatoes, lettuce, taco sauce and taco seasoning combine to create this amazing recipe, perfect for summer time.

Ingredients
4 tomatoes
1 lb. ground beef
1 packet Taco Seasoning
Shredded Lettuce
Onions diced
Fiesta Mexican blend Shredded Cheese
Sour Cream
Taco sauce for dipping

How to prepare
Step 1:
Cut an “X” shape into the top of each tomato and pull them apart gently. Then brown your hamburger, and add in
the taco seasoning.
Step 2:
Fill the bottom of each tomato with lettuce, then the taco meat, onion, and shredded cheese. Top with sour cream.
Serve!
Tips
Depending on the size and shape of the tomatoes you choose, you may need to scale up the recipe and
create a second batch to fit them. Fortunately, this is simple to accomplish, and leftovers are always
appreciated.
The filling may be prepared ahead of time and reheated in the microwave or in a pan. stuff the tomatoes just before
you plan to dine.
