Ingredients
For the Dough:
- 4 ½ tablespoons (60g) unsalted butter
- 2 tablespoons minced garlic
- 3 ½ cups + 1 tablespoon (434g) all-purpose flour, measured accurately (see notes)
- 3 tablespoons chopped fresh parsley
- 1 tablespoon granulated sugar
- 2 ¼ teaspoons instant yeast
- 1 teaspoon fine sea salt
- 1 cup (225g) whole or 2% milk, warmed to 110°F
- 1 large egg, at room temperature
- 1 beaten egg, for brushing
For the Garlic Butter:
- 2 tablespoons (28g) unsalted butter
- 1 tablespoon minced garlic
- 1 tablespoon chopped fresh parsley
- Flaky sea salt, for garnish (optional)
Instructions
- Preheat & Prepare the Pan
Preheat your oven to 350°F (180°C). Grease the bottom and sides of a 9×13-inch baking pan with butter and set aside. - Make the Garlic Butter for Dough
In a small pot, melt 4 ½ tablespoons of butter. Add 2 tablespoons of minced garlic and cook for 1–2 minutes, or until fragrant. Remove from heat and allow it to cool slightly. - Mix the Dough
In a stand mixer bowl, combine the flour, parsley, sugar, yeast, and salt. Add the warmed milk, egg, and the cooled garlic butter. Knead with the dough hook on low speed until smooth and soft, about 10–12 minutes. If the dough is too sticky, add more flour, one tablespoon at a time, until it’s tacky but manageable. - Divide & Shape the Dough
Divide the dough into 12 equal portions (about 67g each). Shape each portion into a smooth ball, pinching the bottom to seal. Place the balls into the prepared baking pan, spacing them evenly. Cover with plastic wrap or a clean towel and let rise in a warm spot until doubled in size, about 1–2 hours. - Egg Wash & Bake
Once risen, brush the tops with the beaten egg. Bake for 20–30 minutes, or until the tops are golden brown. - Make the Garlic Butter for Brushing
While the rolls bake, prepare the garlic butter by melting 2 tablespoons of butter in a pot. Add 1 tablespoon of minced garlic and cook until fragrant, about 1–2 minutes. Remove from heat and stir in the parsley. - Finish the Rolls
When the rolls come out of the oven, brush them immediately with the garlic butter and sprinkle with flaky sea salt if desired. Serve warm and enjoy!
