Ingredients:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into pieces
  • 8 cups chicken broth
  • 2 cups water
  • 2 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper, to taste
  • 2 cups egg noodles, cooked according to package instructions

Directions:

  1. Prepare the Chicken: Heat oil in a large pot over medium heat. Add chicken and cook until browned on both sides, about 5 minutes. Remove chicken from the pot and set aside.
  2. Saute Vegetables: In the same pot, add onion, garlic, carrots, and celery. Cook for about 5 minutes until vegetables begin to soften.
  3. Simmer the Soup: Pour in chicken broth and water. Add bay leaf, dried thyme, dried parsley, salt, and pepper. Stir well and bring to a boil. Reduce heat and simmer for 20 minutes to let flavors develop.
  4. Cook the Noodles: While the soup simmers, cook the egg noodles separately according to package instructions. Drain and set aside.
  5. Add Chicken and Finish Soup: Return the cooked chicken to the pot and simmer for another 10 minutes or until chicken is cooked through and tender.
  6. Combine and Serve: Remove bay leaf from the soup. Add cooked egg noodles to the pot and stir to combine with the broth. Taste and adjust seasoning with salt and pepper if needed.
  7. Serve Hot: Ladle the delicious Chicken Noodle Soup into bowls and serve piping hot. Enjoy the comforting flavors and nourishing goodness!
