Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breast halves
  • 4 tablespoons vegetable oil
  • ¾ cup breadcrumbs
  • ¼ cup shredded Parmesan cheese
  • ½ cup milk
  • 3 tablespoons all-purpose flour

For the Sauce:

  • 1 ½ tablespoons butter
  • ¼ cup red bell pepper, chopped
  • 2 garlic cloves, minced
  • ¼ cup red onion, finely chopped
  • ¼ cup orange bell pepper, chopped
  • ¼ cup green bell pepper, chopped
  • 1 ½ cups mushrooms, sliced
  • 1 teaspoon red pepper flakes
  • 1 cup chicken broth
  • 1 ½ cups heavy or whipping cream
  • 1 cup shredded Parmesan cheese
  • ¼ cup fresh basil, chopped

For the Pasta:

  • 1 (12 oz) package bow-tie pasta

Instructions

  1. Prepare the Sauce: In a large Dutch oven or saucepan, melt the butter over medium heat. Add the red onion, red, green, and orange bell peppers, and sliced mushrooms. Sauté until the vegetables are tender but still firm. Add the minced garlic and red pepper flakes, cooking for an additional minute. Stir in the chicken broth and heavy cream, then simmer for 5 minutes. Add the Parmesan cheese and fresh basil, then remove from heat.
  2. Cook the Pasta: Cook the bow-tie pasta according to package directions. Drain and set aside, keeping warm.
  3. Prepare the Chicken: Pound the chicken breasts to an even thickness. In a shallow dish, combine the breadcrumbs, flour, and Parmesan cheese. Pour milk into another shallow dish. Dip each chicken breast first into the breadcrumb mixture, then into the milk, and again into the breadcrumb mixture to coat.
  4. Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Pan-fry the breaded chicken breasts for 3-4 minutes per side, until golden brown and cooked through. Transfer to a plate lined with paper towels to drain.
  5. Combine Pasta and Sauce: Reheat the sauce if needed, then add the cooked pasta. Stir well until the pasta is evenly coated in the creamy sauce.
  6. Serve: Divide the pasta among individual bowls. Top with a sliced chicken breast and additional shredded Parmesan cheese.

Tips

  • For a Crispier Chicken: Double dip the chicken in the breadcrumbs for an extra crispy crust.
