  2. Prepare the Filling: In a medium mixing bowl, combine cream cheese, mayonnaise, and pressed garlic using a fork until smooth. Stir in the mozzarella, parmesan, and chopped spinach until well mixed.
  3. Prepare the Chicken: Place each chicken breast on a flat surface. Use a sharp knife to cut a pocket into the side of each chicken breast, slicing 3/4 of the way through without cutting all the way.
  4. Stuff the Chicken: Divide the filling evenly among the chicken breasts and stuff each pocket with the spinach mixture. Use toothpicks to seal the edges to keep the filling inside while cooking.
  5. Season the Chicken: Season the outside of each chicken breast with salt, black pepper, garlic powder, and paprika, ensuring even coverage.
  6. Sear the Chicken: Heat 1 1/2 tablespoons of olive oil in an oven-safe skillet (like cast iron) over medium heat. Sear the stuffed chicken breasts for about 4 minutes per side, or until golden brown.
