
Here’s an adapted version of a recipe I recently discovered online. I must confess, I had to go through it multiple times to ensure I was reading it accurately. The instructions seemed remarkably unique and almost unbelievable. Allow me to present my rendition:
Ingredients:
- 2 cans (15 ounces each) Sweet Corn, drained
- ⅓ cup mayonnaise
- 2 teaspoons granulated sugar
- 3 tablespoons unsalted butter
- 1 cup grated Mozzarella Cheese
- 1 green onion, thinly sliced
- Salt and pepper to taste
Instructions:
- Preheat a cast iron skillet over medium-high heat.
- Add the drained corn, butter, mayonnaise, and sugar to the skillet. Stir well until the butter has melted and the ingredients are combined.
- Once the mixture starts to bubble, sprinkle the grated Mozzarella cheese evenly over the top.
- Turn on the broiler to low heat and carefully transfer the skillet to the oven, placing it under the broiler.
- Allow it to cook until the cheese and topping begin to turn golden brown. Keep a close eye on it to prevent burning.
- Remove the skillet from the oven and garnish with thinly sliced green onions.
- Season with salt and pepper to taste.
