Cheesy Korean Corn

Here’s an adapted version of a recipe I recently discovered online. I must confess, I had to go through it multiple times to ensure I was reading it accurately. The instructions seemed remarkably unique and almost unbelievable. Allow me to present my rendition:

Ingredients:

  • 2 cans (15 ounces each) Sweet Corn, drained
  • ⅓ cup mayonnaise
  • 2 teaspoons granulated sugar
  • 3 tablespoons unsalted butter
  • 1 cup grated Mozzarella Cheese
  • 1 green onion, thinly sliced
  • Salt and pepper to taste

Instructions:

  1. Preheat a cast iron skillet over medium-high heat.
  2. Add the drained corn, butter, mayonnaise, and sugar to the skillet. Stir well until the butter has melted and the ingredients are combined.
  3. Once the mixture starts to bubble, sprinkle the grated Mozzarella cheese evenly over the top.
  4. Turn on the broiler to low heat and carefully transfer the skillet to the oven, placing it under the broiler.
  5. Allow it to cook until the cheese and topping begin to turn golden brown. Keep a close eye on it to prevent burning.
  6. Remove the skillet from the oven and garnish with thinly sliced green onions.
  7. Season with salt and pepper to taste.
  8. Serve and savor the delightful flavors!
