  • 1 cup cold half and half, minus 2 Tbsp*
  • 1/2 Tbsp melted butter, for brushing

  • 2 Tbsp unsalted butter
  • 1 lb breakfast sausage, casings removed
  • 1/4 cup all-purpose flour
  • 2 1/2 cups milk (low fat or whole milk)
  • 1/4 tsp fine sea salt, or to taste
  • 1 1/2 tsp coarsely ground black pepper, or to taste
  • 1/8 tsp red pepper flakes (optional)

Instructions

  1. Prepare the Biscuits
    • Make the biscuit dough and bake following your preferred biscuit recipe or the instructions above. While the biscuits are baking, prepare the sausage gravy so everything is ready to serve together.
  2. Cook the Sausage Gravy
    • Heat 2 tablespoons of butter in a large skillet or cast-iron pan over medium-high heat. Add the sausage, breaking it apart with a spatula, and cook until fully browned (about 5 minutes).
    • Reduce the heat to medium. Sprinkle the flour evenly over the cooked sausage and stir constantly for 3 minutes to cook off the raw flour taste.
