  • 1 medium onion, finely chopped
  • 10 oz can Rotel Tomatoes with Green Chiles (with juice)

  • 1/2 tsp smoked paprika
  • 1/4 to 1/2 tsp chili powder (to taste)
  • 1/2 tsp fine sea salt (to taste)
  • 1/4 tsp freshly cracked black pepper (to taste)
  • 15 oz can black beans (with juice) or tri-bean blend
  • 6 (10-inch) flour tortillas
  • 2 cups (8 oz) shredded Mexican cheese blend, or equal parts mozzarella and medium cheddar

Instructions:

  1. Cook the Beef: Heat a large non-stick skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until fully browned, about 5 minutes. Skim off excess fat, leaving 2-3 tablespoons in the pan.
  2. Add the Seasonings: Add the chopped onion, cumin, smoked paprika, and chili powder to the skillet. Stir occasionally, cooking for 3-4 minutes until the onion softens and the beef is nicely browned.
  3. Add Tomatoes and Beans: Stir in the can of Rotel tomatoes with green chiles and the black beans, including their juices. Reduce heat to medium-low and simmer, stirring occasionally, for 8-10 minutes until the tomatoes break down and most of the liquid has evaporated. Season with salt and pepper to taste.
  4. Assemble the Burritos: Lay the tortillas flat on a clean work surface. Sprinkle half of the cheese evenly in the center of each tortilla, leaving about a 1-inch border on the edges. Spoon about 2/3 cup of the beef mixture over the cheese and top with the remaining cheese.
  5. Fold the Burritos: Fold in the short sides of the tortilla over the filling, then fold the bottom edge up, tucking it in tightly. Fold in the corners and roll the burrito tightly until sealed. Repeat with the remaining tortillas.
  6. Cook the Burritos: Heat a little oil in a skillet over medium heat. Place the burrito seam-side down and cook, turning occasionally, until golden brown on all sides, about 3-5 minutes. Serve with your favorite toppings and sauces.
