Ingredients
BBQ Chicken
- 2 tablespoons olive oil
- 1 small red onion, thinly sliced
- 3 cloves garlic, minced
- 2 ½ cups shredded roasted chicken
- ½ teaspoon smoked paprika
- 1 teaspoon Worcestershire sauce
- 1 cup BBQ sauce
- 12 slices Havarti cheese
Garlic Butter Bread
- ¼ cup butter
- 2 cloves garlic, minced
- 2 teaspoons fresh parsley, minced
- 12 slices sourdough or sturdy white bread
Instructions
Prepare the BBQ Chicken
- In a large skillet, heat olive oil over medium heat. Add the red onion and cook for about 2 minutes until softened.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in shredded chicken, smoked paprika, Worcestershire sauce, and BBQ sauce. Mix well and cook for 2-3 minutes until the chicken is fully coated and heated through.
Make the Garlic Butter Bread
- In a small bowl, combine butter, minced garlic, and parsley. Microwave until the butter melts.
- Lay out the 12 bread slices on a flat surface. Spread the garlic butter mixture on one side of each slice.
Assemble the Sandwiches
- Flip each slice so the unbuttered side faces up. On 6 of the slices, place a slice of Havarti cheese, then evenly divide the BBQ chicken mixture on top.
