You stuff it, they’ll eat it. That’s how it is at my house. Children love meals that are fun and different like this dish of Stuffed Bell Peppers. They can’t wait to tear into the pepper to get to the “surprise” in the middle. As far as the actual pepper, it is as rich in history as it is in vitamins. Your children will be fascinated to learn that the bell pepper was written about by the pirate and ship’s surgeon in the book “A New Voyage and Description of the Isthmus of America” way back in 1600. If you are so inclined, you might even pull up some of the book for an interesting history lesson.  It’s doing little things as such that make family meals extra special, even on the week-days.
